Karen Galan is a passionate and skilled pastry
chef with over 20 years of experience. She trained with French pâtissier
Patrice Berson in Honolulu. For 16 years, she had the privilege
of being mentored by Hawaii’s famous and beloved pastry expert
David Brown at the Hilton Waikoloa on the Big Island, where she
became known for her gingerbread houses. Galan masters all things
sweet—chocolate confections, sugar works, mousses, fine pastries
and petits fours, plus a variety of cakes. She specializes in celebratory
customized cakes that may feature handcrafted frostings,
birthday drawings, trailing flowers, and personalized messages.
Her baked goods use only the finest ingredients, including tropical
flavors such as passion fruit, guava, and Big Island macadamia
nuts. Galan fulfills mainland orders for fine pastries and
gift baskets. Please contact her
